Nothing is better than a big pot of Chicken Tortilla Soup on a chilly day! It’s so easy to throw all of the ingredients in a crock-pot and forget about it! Don’t worry if you don’t have a crock-pot, you can still make this on the stove top. You just may have to cook it on low and keep an eye on it!

Ingredients
- 2-3 Boneless/Skinless Chicken Breast I bought the one already seasonedgarlic and herb- frozen
- 1 packet of Sazon Goya
- 1 tsp Garlic Powder
- 1 tsp Ground Cumin
- 1/2 cup ½of Cilantro chopped
- 1 cup of onion chopped
- 1 tsp salt
- 1 tsp of pepper
- 1 can of diced tomatoes not drained
- 1 can of Enchilada Sauce
- 1 can of Chicken Broth
- 1 tsp of Chili Powder
- 2 cups of water
- 1 package of frozen corn
- 1 Lime (freshly squeezed
- 1 package of frozen corn

Instructions
- All you have to do is put everything in the crock-pot and let it sit. I usually take the chicken out towards the end and shred it. Then put it back in to simmer with rest of the soup for about 45 min!
Recipe Notes
After simmering for 6 hours the soup has so much flavor, just add your favorite tortilla strips, avocado and a squeeze of lime!!

Tortilla soup is one of my favorite dishes 😉 I’m thinking instead of the chili powder, I’ll add a couple of chipotle chilies and let them simmer in the soup.
