Nothing is better than a big pot of Chicken Tortilla Soup on a chilly day! It’s so easy to throw all of the ingredients in a crock-pot and forget about it! Don’t worry if you don’t have a crock-pot, you can still make this on the stove top. You just may have to cook it on low and keep an eye on it!

This is my favorite crock-pot recipe! So simple and easy!

Instructions
  1. All you have to do is put everything in the crock-pot and let it sit. I usually take the chicken out towards the end and shred it. Then put it back in to simmer with rest of the soup for about 45 min!
Recipe Notes

After simmering for 6 hours the soup has so much flavor, just add your favorite tortilla strips, avocado and a squeeze of lime!!
