It’s a new year but I’m determined to stay on track and keep my recipes as healthy as possible! Post® Honey Bunches of Oats® made it super easy when making my favorite Mexican Un-Fried Ice Cream! We can all agree that we still have to enjoy something sweet every now and them, but does it really have to be an un-healthy choice… I say no!
Post® Honey Bunches of Oats® already gives you great choices for a healthy start to your morning, the Almond and Strawberry are my favorites. I know that I’m getting all the whole grains and nutrients to keep me going! But I thought it would be fun to include my favorite cereal for an afternoon dessert, and it really does taste just like a Fried Ice Cream you would have at your favorite Mexican restaurant but this one you can enjoy guilty free in your own home!

- 3 Cups Post® Honey Bunches of Oats®
- 1 Quart Vanilla Ice Cream
- 3 Tbl Melted Butter
- 1 Tbl Cinnamon
- 3 Tbl Sugar
- 1 Can Reddi Whip
- 1 C Cheeries
Ingredients

- Roll Vanilla Ice Cream into desired size balls, and place in the freezer for 2-4 hours.
- Place the Post® Honey Bunches of Oats® into a plastic bag and crush.
- Mix melted butter, sugar and cinnamon together.
- Pour crushed Post® Honey Bunches of Oats® and mixture into a baking sheet and roll each ice cream ball covering it completely. * wrap the ice cream balls in foil to keep the coating on it until ready to eat!
- Add Reddi Whip, cherry on top and enjoy!

This is a great idea specailly for those who are trying follow a healthy routine. I’m a fan of sugar, I eat too many sweet junk food during the day but I’m trying to change this bad habit of mine. It is hard though, I feel the need to eat something sweet everyday after lunch for example, and I normally eat ice cream for that. Maybe I should try this dessert instead!

I remember LOVING the fried Mexican ice cream at a (now defunct) Mexican restaurant called Chi-Chi’s. This looks much healthier!

Oh what a fun, healthy idea! Love it!! Funny enough, it brings me back to when I lived in Japan, they would often serve ice cream over a bed of corn flakes, which I found so odd, but it’s actually great!
I went to a Mexican restaurant recently that served their ice cream with cereal on it like this! Sounds so easy to make at home!
