Summertime vibes are in the air and that calls for one of my favorite summer recipes! If you are like me, then you love anything with peanut butter. We love enjoying this delicious snack poolside, or hanging out on the deck after a busy day! Honestly, with my daughter already turning 16, I truly cherish the moments I’m spending with her this summer, and baking our favorite snacks is one of them! These Peanut Butterfinger® Chocolate Cookie Bars are so easy to make and have the best flavor!

Ingredients:

  • 1 Cup of Chocolate Chips
  • 1 Cup of Graham Crackers (Crushed)
  • 4 tbsp of Butter (melted)
  • 1 8oz Tub of Whip Topping (thawed)
  • 1 Cup of Peanut Butter
  • 1/2 Cup of powdered sugar
  • 1 package of Butterfinger® Fun Size bars (Chopped)

Step 1: Preheat oven to 350ºF. Mix together the graham crackers and melted butter in a bowl until all the crumbs are completely coated. Place the graham cracker crust in an 8×8 un-greased pan, and press down firmly.

Step 2: Spread the 1 cup of chocolate chips on top of crust, and place in the oven for 10 minutes. Then remove pan from the oven and spread the melted chocolate evenly, coating the graham cracker crust. Place in the fridge to set.

Step 3: While the mixture is setting, take peanut butter, whip topping, and powdered sugar; mix together with a hand or electric mixer until fluffy. Add in 1/2 of the chopped Butterfinger® bars and mix..

Step 4: Remove the crust from the fridge and spread whipped peanut Butterfinger® mixture on top of the chocolate, sprinkle remaining chopped Butterfinger® on top of the whipped topping and drizzle with melted chocolate. Set in fridge for 30 minutes and enjoy!
