Summer is definitely here and its super hot in Texas! So I’ve been trying to cook less, but still enjoying my favorites! I had to share this delicious Pineapple Chicken Salad Sandwich recipe. It’s the mix of fruits and veggies that give an amazing burst of flavor!
Along with the fruit and veggies, what really makes the flavor pop is the creamy mixture of the lemon juice, Cacique Creama and Mayo! That is the secret to this recipe!!! Once you try it, you will crave this delicious salad!

Ingredients
- 1 cup Rotisserie Chicken Shredded
- 1/4 cup Red Grapes Chopped
- 1/4 cup Sliced Almonds
- 1/4 cup Green Onion Chopped
- 1/4 cup Celery Chopped
- 1/2 cup Pineapple Chopped
- 2 tbsp Lemon Juice
- 2 tbsp Cacique Crema Agria
- 3 tbsp Mayo

Instructions
- Combine Chicken, grapes, almonds, onion, celery, pineapple in a bowl and set aside.
- Mix together lemon juice and Cacique Creama. Mix until its smooth. Add salt & pepper to taste!
- Add lemon/creama mixture and mayo to bowl and mix. Refrigerate for 2 hours and serve on a croissant.
