Red Onion (diced)

Shredded Cheese
Instructions
Rinse Sweet Peppers and place them on a foil lined baking sheet and broil for 10 minutes.
Slice peppers in half and clean the inside removing seeds.
In a separate pan sautee corn, black beans & red onion in olive oil.
Place veggie mixture in each sweet pepper and sprinkle shredded cheese on top. Then place on baking sheet and bake for 10 min at 400 degrees.
