Stuffed Mini Sweet Peppers

If you are like me, then you are trying to make healthy choices but still enjoy sweet and tasty snacks! These Stuffed Mini Sweet Peppers have been my new favorite thing to enjoy lately. I love how all the flavors taste together and I also enjoy dipping them in my favorite Avocado Ranch dressing for a little extra kick of flavor!

Instructions
  1. Rinse Sweet Peppers and place them on a foil lined baking sheet and broil for 10 minutes.
  2. Slice peppers in half and clean the inside removing seeds.
  3. In a separate pan sautee corn, black beans & red onion in olive oil.
  4. Place veggie mixture in each sweet pepper and sprinkle shredded cheese on top. Then place on baking sheet and bake for 10 min at 400 degrees.
