If you are like me, then you are trying to make healthy choices but still enjoy sweet and tasty snacks! These Stuffed Mini Sweet Peppers have been my new favorite thing to enjoy lately. I love how all the flavors taste together and I also enjoy dipping them in my favorite Avocado Ranch dressing for a little extra kick of flavor!

Ingredients
- 1 tbsp olive oil
- 1 can Sweet Corn
- 1 can Black Beans
- 1/4 cup Red Onion (diced)
- 10-12 Mini Sweet Peppers
- 1 cup Shredded Cheese

Instructions
- Rinse Sweet Peppers and place them on a foil lined baking sheet and broil for 10 minutes.
- Slice peppers in half and clean the inside removing seeds.
- In a separate pan sautee corn, black beans & red onion in olive oil.
- Place veggie mixture in each sweet pepper and sprinkle shredded cheese on top. Then place on baking sheet and bake for 10 min at 400 degrees.

Serve and enjoy. or store in an air tight container.

Those mini peppers are so cute, Not sure if they have those in my store, maybe jalepenos for spicy or bigger peppers?
