Happy Fall Ya’ll! I had to share one of my favorite go-to healthier meals that I’ve been enjoying these days! Sweet potatoes are one of my favorite veggies, they are a great source of fiber, vitamins and minerals! They also support healthy vision, enhance brain function and are great for your immune system!
This Sweet Potato Stir Fry is one of my favorite ways to enjoy it!

Ingredients
- 2 cups Sweet Potato's (spiralized)
- 1 tbsp olive oil
- 1 tbsp Minced Garlic
- 1/4 cup green pepper Chopped
- 1/4 cup Onion Chopped
- 1 cup Broccoli Chopped
- 2-3 Tbsp Soy Sauce
- 1 Tbsp Salt & Pepper

Instructions
- Add olive oil, minced garlic and spiraled sweet potatoes in a non stick pan and sauté for 3-5 minutes.
- Add in chopped green pepper, onion, salt & pepper, continue to stir for 3-5 minutes.
- Add in chopped broccoli and soy sauce and sauté for 3-5 minutes. Serve and Enjoy!
