I had to share this delicious casserole recipe that we have been loving and its so easy to make! It’s made with the most delicious Green Tomatillo Sauce! What makes this sauce so special is that it’s the original Mi Tierra Tomatillo Simmering Sauce from La Familia Cortez Restaurants in San Antonio Texas! It’s bursting with flavor and will give any meal that extra kick! The Mi Tierra Tomatillo Sauce is made with the perfect blend of smoky roasted tomatillos, fresh cilantro and spicy serrano chilis.
This casserole is one of my favorite dishes to have for our family get-togethers, and is definitely a great recipe for the holidays! Check out my easy to make recipe that I enjoy making, its perfect with a side of avocado! So Good!!
Boil the chicken breast. After, Shred chicken into pieces and place in pan with a small can of tomato sauce.
Prepare the casserole dish and spray with a non stick spray. Place one layer of corn tortillas and fill the bottom of the dish.
Layer the chicken on top of the tortillas, and the cheese on top of the chicken. Repeat the same process 1 more time starting with another layer of tortillas
Cover and Bake for 45 Minutes. Top with diced tomatoes and Enjoy!

If you can’t find pre-seasoned chicken breasts in your grocery store, I love to season the chicken breast with Adobo, Salt & Pepper, once you add the tomato sauce it’s full of flavor. However HEB has a great selection! I do add the tomatillo sauce to each layer except the top! Enjoy!
